This is about the content of minerals that get into the flour by, for example, grinding the grain cover. Therefore, it is light and will work wherever you do not need to add baking powder, but only beaten egg whites. It aerates perfectly when sifted, which makes the cake extremely fluffy after baking. It is also very easy to make dough from it, which later rises fantastically. It is the most refined and therefore contains the least nutrients, but because of this it is so perfectly smooth.
