Spelt is a relative of common wheat and one of the oldest cereals known to man. This ancient variety of wheat was valued thousands of years ago due to its properties. Although spelt was forgotten for some time and the size of crops has decreased significantly, the fashion for this grain is now coming back. And there are several reasons for this.
Spelt is valued for many reasons, but primarily because of the high quality of the grain itself. Unlike regular wheat, it is a variety that, due to its specificity, does not require chemical fertilization. For this reason, farmers often undertake its cultivation on organic farms. For this reason, both the grain and the products made from it (e.g. organic spelt flour) are much more natural and better absorbed by our body. It is no coincidence that spelt is the most digestible grain among all varieties.
Spelt flour type 500, or the popular "five hundred" is the most universal type of flour suitable for practically everything. It is more refined than other varieties, namely light spelt flour (known as bread flour) and wholemeal spelt flour (known as wholemeal). This means that we can not only make healthy breads and rolls from it, but it will also work well in cakes, pancakes, dumplings or savory dishes.
