Sourdough is actually properly acidified rye flour with optimal proportions of lactic and acetic acid. Dried rye sourdough is made as a result of the natural fermentation process of rye flour. Available in a new form, it allows consumers to reduce the time needed to prepare homemade bread by even a few days. It should be remembered that each time it is necessary to add yeast, which is the only one that has a raising function.
This product will perfectly replace traditional sourdough, provided that the right amount of yeast is added. Therefore, it will be useful primarily when baking rye bread (or with the addition of rye flour) and mixed bread and rolls. As an addition to wheat and spelled flour, it will enrich baked bread with a unique aroma. Thanks to its properties, natural rye sourdough is also a component of ready-made bread mixes, e.g. mixes for Old Polish bread.
