Cream of tartar is recommended for stabilizing and increasing the volume of proteins. It makes baking meringues and omelettes easier. It inhibits the crystallization process, thanks to which it is perfect for the production of candies. In combination with baking soda, it is used as a substitute for baking powder. Unlike chemically derived baking powder, Cream of Tartar is a natural agent that is a by-product of the grape fermentation process in winemaking. It is recommended for making cakes and cookies for children.
