All forms of the Patisserie series are made of the highest quality thin steel that is safe for health, which is coated on both sides with a non-stick surface layer, patented by Ballarini. This surface, called CORTAN, allows for stress-free baking without the risk of sticking cakes. It does not contain any substances harmful to health, in particular PFOA, nickel compounds or heavy metals.

Production in the European Union, in the Italian Ballarini factory, guarantees that Patisserie products are safe for health and meet all quality standards. Thanks to the non-stick surface, the risk of sticking is kept to a minimum.
