Pectins are natural plant ingredients that are classified as water-soluble dietary fiber. They can be found in fruits, among others. They have gelling properties, which is why they are most often used in the preparation of jellies, marmalades and fruit jams. They also have health-promoting effects - primarily they help regulate cholesterol and carbohydrate metabolism. In the food industry, pectins are added to various types of products, from sauces through jams, marmalades to low-calorie desserts. The recommended dosage is 8-16 grams of pectin per 1 kg of mass. First, dissolve the pectin in a small amount of water at a temperature of approx. 60 degrees C, and then add it to the hot mass. A 30-gram package should correspond to the dosage for approx. 2 kg of fruit and approx. 1 kg of sugar.
