Pectins are natural plant ingredients that are classified as water-soluble dietary fibre. Pectins can be found in in fruit. They have gelling properties, which is why they are most often used in the preparation of jellies, marmalades and fruit jams. They also have a health-promoting effect - above all, they help regulate cholesterol and carbohydrate metabolism. In the food industry, pectin is added to various types of products, from sauces, jams, marmalades to low-calorie desserts. It is recommended to dose 8-16 grams of pectin per 1 kg of mass. First, dissolve the pectin in a small amount of water at a temperature of about 60 degrees C, and then add it to the hot mass.
